Introducing Executive Chef Jamie Knapp
Executive Chef Jamie Knapp always knew that a restaurant career was his calling. At age 16 he started washing dishes in a fine New Orleans restaurant and continued gaining culinary experience from a French, classically trained executive chef. Jamie began as a catering chef and started his own catering business in Naples, where one of his largest clients Arthrex provided the opportunity for him to serve as many as 275 meals a day.
Jamie's last experience was as Executive Chef at the famous Bay House Restaurant located in Naples. Chef Knapp brings a touch of Charleston and New Orleans cuisine to the new Kitchen 1121 Marek's Collier House Restaurant. The new Kitchen 1121 will feature southern contemporary food with a twist from other regions. Chef Knapp's dishes are highly seasoned with a complex mixture of spices. Starting with a larder of ingredients indigenous to the region, Jamie responsibly crafts menus, playing to what local purveyors have seasonally available at any given moment.

Jamie's personality adds its own uniqueness to Kitchen 1121. He is laidback, yet serious about his cuisine. Jamie's philosophy is don't take yourself too seriously, stay focused on freshness, flavors, execution, and the guests.
